(HIRAME) flounder VS (KAREI) Flounder
What is your favorite fish which you eat? These days, there are a lot of fishes in Japan. In addition, the number of alien species increase. The same fishes are exist. When you eat fish, you have never get wise the differences. I also can not get wise about it. That is why, both taste are very similar. If you know about this differences, you will have a little pride.
We compare HIRAME and KAREI for look and feel. When we put them eye-side up, HIRAMEs' head gets left. Furthermore, the size of it is 80 centimeters. It eats a little fish and shrimp. So that, it has a good chin, sharp teeth, a big mouth and awful face. On the other hand, KAREIs' head gets right. The size is about 40 centimeters. It has a little mouth, teeth and looks like a pursy mouth. We can easy to recognize "Left HIRAME and Right KAREI" since olden days.
The price of both fishes are same. They are high class fishes. However, In a general way, HIRAME is higher class than KAREI. That is the reason, the influence of Japanese food rule. In Japan, we often hold out the dishes that the head gets left. Therefore, KAREI is placed in a lower rank. HIRAME is 6000~7000 yen/kg. KAREI is about 10000 yen/kg. Now and then these prices are the same as before.
The taste of them are very different. HIRAME has fresh taste. KAREI has rich taste. HIRAME often cook sashimi and French dishes. If you use fire to cook HIRAME, it gets hard. On the other hand, KAREI often cook pottage and fry and the others. Moreover, you use fire to cook KAREI, it gets soft and taste good. There are features for both fishes.
